Arran Gold Cheesecake Recipe
Be very careful, this ‘no bake’ cheesecake recipe results in a very addictive dessert!
100g unsalted butter
250g crushed biscuits (we like digestives or use gluten free biscuits)
450g cream cheese
1 large measure of Arran Gold (or more to taste)
100g icing sugar
200ml double cream.
Method: Crumble the biscuits in a food processor and add the butter to bind the crumbs together. Press the crumb into a 9 inch spring bottom flan tin to cover the base and sides. Mix the rest of the ingredients together in a bowl until combined. Add enough Arran Gold to suit your taste. Pour the cream mixture into the flan tin, to meet the top of the biscuits sides. Place the cheesecake in the fridge until set. Decorate the top of the cheesecake, with chocolate truffles and dark chocolate shavings. Slice into generous portions, serve and enjoy!…
