Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
Aultmore, a name derived from the Gaelic “An t-Allt Mòr” meaning “Big Burn,” is a Speyside distillery with a rich history dating back to 1896. Founded by Alexander Edward, a prominent figure in the Scottish whisky industry, Aultmore quickly gained recognition for its high quality spirit. Nestled in the heart of Speyside, Aultmore draws its water from the crystal-clear Burn of Auchinderran, contributing to the distinctive character of its whisky. The distillery’s traditional pot stills, combined with the unique local water source, create a spirit that is both delicate and complex. Over the years, Aultmore has experienced various ownership changes. In the early 20th century, it was acquired by John Dewar & Sons, a significant player in the Scotch whisky industry. This association has helped to elevate Aultmore’s profile and ensure its continued production of fine single malt whisky. Today, Aultmore’s whisky is known for its elegant and refined nature. It often exhibits notes of citrus, honey, and subtle spice, with a long, lingering finish.
This single malt whisky was distilled in 2007 at the Aultmore distillery in the Scottish Speyside whisky region. It was matured 1st Fill Oloroso Sherry Butts and in 2024 was bottled at 57.1% alc/vol as part of the Signatory Vintage 100 Proof Exceptional Cask range. This whisky has no added colouring and is unchillfiltered.
Our Tasting Notes
Nose: Rich and inviting, with a complex interplay of aromas. Initially, ripe fruits like plums and cherries dominate, followed by a wave of oaky notes and a subtle hint of leather. A touch of roasted barley adds depth, while a delicate sweetness lingers in the background.
Palate: Bold and full bodied, the palate is a symphony of flavours. Dark chocolate and roasted malt take centre stage, followed by juicy dried fruits like raisins and figs. A subtle spiciness emerges, complemented by a touch of cocoa and a lingering sweetness.
Finish: Long and warming, the finish is dominated by notes of milk chocolate, raspberry sauce, and butterscotch. The oaky influence persists, adding complexity and depth.
Overall Impression: This 17-year-old Aultmore is a remarkable dram that showcases the distillery’s signature style. The influence of the first-fill Oloroso sherry cask is evident, imparting rich, complex flavours that complement the spirit’s inherent character. A true delight for whisky enthusiasts.
