Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
The Caol Ila Distillery, The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.
This single malt whisky was distilled in 2010 at the Caol Ila distillery before being placed in a single refill Sherry Butt and left to mature for 9 years. In 2020 it was bottled at 59.9% alc/vol as part of the Signatory Vintage Cask Strength Collection. Only 665 bottles worldwide were produced of this fine liquid for us all to enjoy.
Our Tasting Notes
Nose: Dark fruits and dark chocolate, leather and tobacco, toasted nuts and bonfire peat smoke. Hints of garden herbs and soft oak notes.
Palate: Smoky with red fruits and sherry notes, toasted nuts and dark chocolate, oak spice.
Finish: Medium to long, lovely oak notes, sherry sweetness, chocolate and a soft hint of mint.
