Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.

The Craigellachie distillery was opened in 1891 by the Craigellachie Distillery Company Ltd and was mainly used for producing White Horse blended whisky. In 2004 they released their first single malt aged 14 years. The distillery is now currently owned by John Dewar and Sons and they collect the water for making whisky from a spring on Little Conval Hill. The distillery also uses worm tubs style condensers for their stills, this allows for the new make spirit to retain more of a sulphurous and meaty character. With this malt whisky you can expect perfume, sweetness and spice with a hint of mint and freshly cut lawn.

This single malt whisky was distilled in 2007 at the Craigellachie distillery in the Scottish Speyside whisky region. It was matured 1st Fill Oloroso Sherry Butts and in 2024 was bottled at 57.1% alc/vol as part of the Signatory Vintage 100 Proof Exceptional range. This whisky has no added colouring and is unchillfiltered.

Our Tasting Notes

Nose: Rich and inviting, with a complex interplay of aromas. Initially, ripe fruits like plums and cherries dominate, followed by a wave of oaky notes and a subtle hint of leather. A touch of roasted barley adds depth, while a delicate sweetness lingers in the background.

Palate: Bold and full-bodied, the palate is a symphony of flavours. Dark chocolate and roasted malt take centre stage, followed by juicy dried fruits like raisins and figs. A subtle spiciness emerges, complemented by a touch of cocoa and a lingering sweetness.

Finish: Long and warming, the finish is dominated by notes of milk chocolate, raspberry sauce, and butterscotch. The oaky influence persists, adding complexity and depth.

Overall Impression: This 16-year-old Craigellachie is a remarkable dram that showcases the distillery’s signature style. The influence of the first-fill Oloroso sherry cask is evident, imparting rich, complex flavours that complement the spirit’s inherent character. A true delight for whisky enthusiasts.
