The Whisky
Explore the vibrant, tropical heart of the Highlands with the Fettercairn 2007 Aged 11 Years Cadenhead. While many Fettercairn releases are bottled at lower strengths, this specific 2019 expression from Cadenhead’s Authentic Collection is presented at a powerful cask strength of 56.7% ABV. Distilled in 2007 and matured for 11 years in a single Bourbon Hogshead, this 700ml bottling is a “pure” representation of the distillery’s unique spirit, free from chill-filtration or added coloring.
Inside information highlights that this cask was selected to showcase the exotic fruit esters that Fettercairn is famous for, amplified by the high-proof delivery. The use of a single Bourbon hogshead allows the natural oiliness and “crunchy” malt character of the spirit to take center stage, providing a much more intense and raw experience than the official distillery bottlings. With only a limited number of bottles pulled from the cask, this is a true collector’s snapshot of a 2007 vintage.
Our Tasting Notes
Nose: An immediate burst of tropical sunshine. You are greeted by dried mango, papaya, and honeyed apricots. As it opens, deeper notes of vanilla bean and coconut emerge, typical of high-quality bourbon wood, alongside a curious and pleasant hint of green tea and fresh pine.
Palate: The arrival is powerful and mouth-coating. The high ABV carries intense flavours of pineapple upside-down cake and spicy ginger. Mid-palate, it turns toward a creamy, dessert-like profile with custard creams, white chocolate, and a touch of salted macadamia nuts.
Finish: Long, warming, and exceptionally clean. The finish lingers with a spicy kick of white pepper and oak char, finally tapering off with a refreshing return of lemon zest and tropical fruit skin.
The Distillery
Fettercairn, located in the foothills of the Grampian Mountains, is home to one of the most ingenious features in the whisky world: copper cooling rings on the outside of their stills. This unique setup sprays cold water down the neck of the still during distillation, cooling the copper and increasing “reflux”—ensuring only the lightest, purest vapors become whisky. A unique factual detail: The distillery was founded in 1824 by Sir Alexander Ramsay, who famously chose a unicorn as the distillery’s emblem, a symbol of purity and strength that still adorns every bottle today.
Overall Review
The Fettercairn 2007 11 Year Old 56.7% is globally reviewed as a “fruit bomb for the purist,” praised for its unapologetic intensity and tropical depth. Critics have lauded its oily texture and the way the high proof carries the distillery’s signature exotic notes, making it a mandatory purchase for Highland enthusiasts.
