The Whisky

The Kilchoman Machir Bay Cask Strength (2025 Release) is the high voltage evolution of Kilchoman’s signature malt. After a three year hiatus, this fan favourite returns at a staggering 58.1% alc/vol, offering a raw and unfiltered look at the distillery’s “Machir Bay Evolution” vatting. While the core 46% expression is beloved for its balance, this 2025 limited edition is designed for those who want the volume turned up to ten. Matured in a precise ratio of 90% fresh ex-Bourbon barrels and 10% Oloroso Sherry casks, it delivers the pure, unadulterated “distillery character” straight from the warehouse.

This 2025 bottling is the first Cask Strength release to utilise the distillery’s updated vatting recipe, which employs slightly more active sherry casks to produce a deeper golden hue and a richer, more viscous mouthfeel. Peated to 50 PPM, it carries all the maritime intensity of the Atlantic coast but with a creamy, honeyed backbone that only a farm-grown malt can provide.

Our Tasting Notes

Nose: Bold and punchy. Intense waves of campfire smoke and ash are immediately softened by sweet vanilla pod and rich honeycomb. Hints of lemon zest, tropical melon, and a delicate floral undertone provide a bright, high toned contrast to the heavy peat.

Palate: Full bodied and explosive. The high ABV carries a concentrated burst of creamy malt sweetness and “charred candy” fruits. This is quickly followed by savoury notes of smoked meats, rich dark chocolate, and a layer of fresh citrus oils that coat the tongue.

Finish: Exceptionally long and evolving. The maritime peat smoke lingers alongside a salty sea spray note, eventually giving way to toasted coconut, cracked black pepper, and a final, sweet flourish of caramel.

The Distillery

Kilchoman is Islay’s “Single Farm Estate,” a place where whisky making is a hands on, agricultural endeavour. Founded in 2005 as the first new distillery on the island in over 120 years, it remains family owned and fiercely independent. They are one of the only distilleries in Scotland to handle every stage of production—growing their own barley, floor mating, distilling, maturing, and bottling—all on-site. Their stills are among the smallest in Scotland, a deliberate design choice that increases copper contact to create a spirit of unparalleled purity. In 2025, the distillery celebrates its 20th anniversary, marking two decades of reviving the traditional “grassroots” method of farm distilling.
