Lindores Abbey is officially recognised site of the first recorded distillation of Scotch whisky. It was back in 1494 that King James IV commissioned Brother John Cor at Lindores Abbey to make aqua vitae with eight bolls of malt. After a break of almost 523 years the stills at Lindores Abbey Distillery are flowing. Twenty years in the making and we can now enjoy a whisky again from where it all began.
Lindores The Casks of Lindores II – Bourbon Cask is an ex-bourbon single malt from Lindores Abbey, bottled at 49.4% alc/vol, natural colour & non-chillfiltered. This expression shows off Lindores’ house spirit with bourbon cask influence, letting the core character (fruit-forward, sweet, soft wood) shine, rather than heavy finishing. Bottled at a higher percentage than many standard maturations (49.4%) but still very accessible — good balance between flavour intensity and drinkability.
Our Tasting Notes
Nose: Apples (mellow / green), ripe banana, sweet pears; vanilla, buttercream, caramel; subtle citrus touches.
Palate: Fruity green apples, lemon/citrus, banana; oak/woody notes, coffee beans; spicy peppery touches. Silky texture.
Finish: Medium length finish: lingering fruit, spice, light oak, warm sweetness.
