The Whisky
This is a phenomenal single cask expression from the Pulteney Distillery. Distilled in 2008 and matured for a full 16 years, this whisky spent its entire life in an active First Fill ex-Oloroso Sherry Butt (#12). Known as ‘The Manzanilla of the North’ for its maritime character, Pulteney’s robust, briny spirit is beautifully complemented by the rich fruit and nuttiness derived from the sherry cask. Bottled by Signatory Vintage for their premium Cask Strength Collection, it is presented at its natural, unadulterated strength 56.4% alc/vol without chill-filtration or added colour.
Our Tasting Notes
Nose: Immediate notes of sea air, brine, and salted caramel, quickly overtaken by dark dried fruits (dates and figs), dark honey, and spiced walnuts from the sherry influence.
Palate: Full bodied and oily. A powerful blend of coastal salinity, dark chocolate, baking spices (nutmeg and clove), and concentrated orange peel. The maritime character keeps the rich sherry from becoming heavy.
Finish: Extremely long and warming, starting sweet and finishing with drying oak, pepper, and a lingering, pleasant salty tang.
The Independent Bottler
Signatory Vintage is one of Scotland’s most respected independent bottlers, celebrated for its unwavering commitment to quality and transparency. Established in 1988 by brothers Andrew and Brian Symington, Signatory Vintage quickly carved a niche by offering single cask, un-chillfiltered, and natural colour whiskies – practices that were far less common at the time but are now widely revered by connoisseurs. Their name, “Signatory,” stems from their original intention to have famous personalities sign the labels of their special bottlings, a unique concept that unfortunately proved impractical but left a lasting legacy in their brand name. Over the decades, Signatory Vintage has amassed an astonishing collection of casks from distilleries across Scotland, including many silent stills. This extensive inventory allows them to release an incredibly diverse range of whiskies, from youthful and vibrant expressions to incredibly rare and aged treasures. Each bottle is a testament to the individual character of the distillery and the unique journey of the liquid within its cask.
Signatory Vintage represents an unparalleled opportunity to explore the true essence of Scotch whisky. Their commitment to bottling at natural cask strength, un-chillfiltered, and without added colouring ensures that every drop delivers the purest and most authentic distillery character. When you choose a Signatory Vintage bottling, you’re not just buying a whisky; you’re acquiring a piece of liquid history, a unique expression that tells its own story from cask to glass. Discover the depth and diversity of Scotland’s finest spirits with Signatory Vintage.
The Distillery
The Pulteney Distillery is located in Wick, in the far north of Scotland, and proudly markets itself as ‘The Maritime Malt’. The distillery uses large, uniquely shaped stills (with no conventional swan neck) which contribute to the heavy, oily, and distinctly salty/briny character of its spirit. Its coastal location influences every stage of maturation, making it an excellent base for powerful cask finishes like this Oloroso Sherry Butt.
