The Whisky

Our Tasting Notes
Nose: A thick and atmospheric opening. You are greeted by the scent of smoked plum jam and black cherries, immediately followed by the classic Islay punch of medicinal bandages and TCP. As it opens, deeper coastal notes of iodine, salted liquorice, and wet pebbles emerge, underpinned by a rich, oaky vanilla.
Palate: The arrival is oily, heavy, and stained with fruit. Intense dark chocolate and espresso notes collide with barbecued brisket and soot. Mid-palate, the Port cask takes over with a surge of blackberry coulis, red currants, and mulled wine spices. The “Digging” earthy peat remains present throughout, providing a rugged, savory backbone to the fruit.
Finish: Incredibly long and smouldering. The smoke lingers like a dying beach bonfire, accompanied by the drying tannins of dark cocoa and grape skin. A final, sweet trail of cinnamon and salted caramel provides a sophisticated, lingering warmth.
The Finishing Cask
