Our Tasting Notes
Nose: A dramatic opening. You are immediately hit by thick peat smoke and medicinal bandages, which are paradoxically wrapped in golden syrup and dried apricots. As it sits, coastal notes of seaweed and charred driftwood emerge, balanced by a sophisticated floral sweetness of honeysuckle and orange blossom.
Palate: The arrival is explosive and oily. The “Fire” of the title manifests as chilli-flecked dark chocolate and woodsmoke, which is quickly soothed by the “Tokaji” influence: honeyed peaches, sultanas, and nectarines. Mid-palate, the “Seaweed” character returns with a savory maritime brine and cracked black pepper.
Finish: Incredibly long and evolving. The smoke lingers as cold fireplace ash, but it is constantly brightened by the wine’s acidity—think lemon curd and crystallised ginger. A final, sweet trail of butterscotch and grilled pineapple leaves the palate craving another sip.
