Crafted by Master Blender Ken Usami at the Shinobu Distillery, it is a harmonious marriage of malt and grain whiskies selected for their exceptional clarity and gentle profile. Bottled at 40% ABV, the Serene White Oak focuses on the “mellowing” effect of high quality wood. While many blends rely on refill barrels, this expression uses a higher proportion of fresh white oak, resulting in a spirit that is both “woody and delicate,” with a luminous, pale-gold colour that reflects its pure, unadulterated nature.

Our Tasting Notes

Nose: Bright, elegant, and “sun drenched.” You are greeted by a fragrant burst of white flowers and lemon blossom, followed by a creamy layer of vanilla custard and honeydew melon. As it breathes, the virgin oak influence reveals sophisticated notes of fresh sawdust and sweet cereal, creating a nose that is remarkably clean and uplifting.

Palate: The arrival is “velvety” and smooth, delivering a gentle sweetness of pear drops and acacia honey. Mid-palate, the white oak takes hold, layering light cinnamon spice and toasted almonds over a base of creamy malt. The texture is “serene”—it flows effortlessly across the tongue without a hint of alcoholic bite or aggression.

Finish: Short to medium and incredibly crisp. The finish lingers with a final flourish of vanilla pod and light oak tannins, finally tapering off with a clean trail of citrus zest and a lingering buttery sweetness.

The Distillery

Shinobu Distillery is located in Niigata, a prefecture celebrated for its pure mountain water and dramatic coastal scenery. Master Blender Ken Usami emphasises a “quiet” approach to distillation, allowing the environment and the wood to do most of the work. By utilising the exceptionally soft water of the region, the distillery produces a spirit that is naturally “luminous,” a quality that is perfectly showcased in this unpeated, wood forward “Serene” expression.
