The Whisky
Pay tribute to a legacy of resilience with Shinobu Single Malt Whisky “Kihei”. Crafted in the “Land of the Three Whites” (Snow, Rice, and Sake) within Japan’s Niigata Prefecture, this 700ml expression is the work of second generation Master Distiller Usami Tatsuya. The name Kihei honors a heritage of unwavering spirit, blending the quiet devotion of a monk with the formidable strength of a warrior. Presented at 46% ABV, Kihei is a triple-cask matured single malt. The spirit is aged in a hand-selected trio of Bourbon barrels, Sherry casks, and Hogsheads, before receiving a final, defining finish in precious Japanese Mizunara Oak. This meticulous process ensures the whisky is non-chill filtered and contains no added colour, allowing the natural interplay between the rugged Niigata environment and the exotic, incense-like qualities of the Mizunara wood to shine.
Our Tasting Notes
Nose: Deeply aromatic and multifaceted. You are greeted by a sweet fusion of vanilla and ripe peach, quickly followed by decadent layers of dark chocolate and cacao. As it opens, the Mizunara influence introduces a sophisticated earthy depth, lifted by exotic hints of mango and a whisper of delicate smoke.
Palate: The mouthfeel is smooth and remarkably harmonious. It delivers a primary burst of honey and vanilla sweetness, which transitions into a mid-palate of dried orchard fruits and mild baking spices. The triple cask maturation provides a “bold yet balanced” structure, where gentle bourbon warmth meets the rich, vinous weight of the sherry wood.
Finish: Long, woody, and elegantly balanced. The finish lingers with a final flourish of toasted oak and light bitterness, finally tapering off with a clean, lasting trail of lingering fruit and soft smoke.
The Distillery
The Shinobu Distillery, founded by Ken Usami (who also established the renowned Niigata Beer), is located along the coast of the Sea of Japan. A unique factual detail: The distillery operates in an environment famous for its extreme snowfall and strong sea breezes, which provide an abundance of exceptionally soft, pure water. The word Shinobu itself translates to “forbearance” or “perseverance,” a trait the distillery embodies by utilising artisanal mashing and fermentation methods honed over 30 years. While the distillery is a newer player in the Japanese landscape, having obtained its license in 2017, its commitment to the “Way of the Warrior” (Bushido) is evident in its bold use of rare Mizunara oak.
