Founded in 1997, Jefferson’s is the brainchild of Trey Zoeller and his father Chet, a famed bourbon historian. They were continuing a family whiskey tradition that goes back to Trey’s 8th generation grandmother who was arrested in 1799 for the “production and sales of spirituous liquors.” His curious and experimental mindset has allowed him to push the boundaries of bourbon whiskey. Upholding tradition, yet always discovering new possibilities.

The Jefferson’s Bourbon does not have its own distillery. Instead, it is what’s known as a non-distiller producer (NDP). Jefferson’s sources its whiskey from various distilleries across the United States, and then it focuses on the aging, blending, and finishing processes to create unique and distinctive bourbon and whiskey expressions. Jefferson’s is celebrated for its commitment to quality and innovation in these post-distillation stages. This includes small-batch production, creative aging techniques like ocean-aging, and the use of a variety of barrels and cask types for finishing.

By not operating a distillery of its own, Jefferson’s has the flexibility to explore a wide range of flavour profiles and techniques, often drawing on whiskey from established and respected distilleries. This approach allows them to curate a diverse portfolio of bourbon and whiskey offerings that cater to a broad spectrum of tastes and preferences. Jefferson’s Bourbon is often associated with small-batch production, where a limited number of barrels are carefully selected and blended to create unique and high-quality expressions. This approach allows for greater control over the final product’s flavour.

Jefferson’s Very Small Batch is a blend of Jefferson’s bourbon, a simple, yet substantial whiskey with 3 additional hand-selected straight bourbons of varying mash bills and ages. Bottled at 41.15% ABV.

Our Tasting Notes

Nose: Caramelised brown sugar, ripe plums and floral notes with hints of citrus.

Palate: Tinned peaches and blonde toffee, honey and ripe cherries with soft of vanilla but plenty of oak.

Finish: Short and warming with honey sweetness, vanilla and delicious toasted oak.
