Irish whiskey may by law contain wine and other ingredients and thus should not be consumed except where the product has a Hechsher or has been Rabbinically approved. No additives are permitted in Scotch Whisky with the exception of caramel colour which is kosher. 2.Ordinary Scotch Whisky whether Single Malt or Blended without any mention of the use of Sherry, Port or other wine casks on the label or marketing literature can confidently be consumed without any concerns relating to having been in contact with wine casks. 3. Whisky which has been matured in wine casks has been subject to detailed halachic consideration by major poskim (including ‘Minchas Yitzchak vol 2, 28 and Igros Moshe Yore Deah vol 1, 62 and 63) who did not forbid its consumption. 4. - Dobsons Australian Whisky Distillery Dobsons Distillery is situated at Eastview Estate, Kentucky, in the sublime New England Highlands. Eastview is a winery, brewery and restaurant… but above all, it is a distillery. A delicious bubbling gurgling magical distillery, and the obsession of one distiller, Stephen Dobson. Dobsons is based in the sleepy village of Kentucky, nestled at over a kilometer above sea level, Kentucky is blessed with some of the purest recorded rainfall in Australia. With an EC reading approaching zero. Water of such purity is a rarity and they believe is one of the many things that contribute to their unique products. Terroir is a term rarely used in the case of spirits…but there is a definitely a sense of terroir in Dobsons spirits, just as a fine Hebridean whiskey will nestle away the iodine and sweet smells of the sea, so their spirit’s reflect their place of distillation and aging. - Fleurieu Australian Whisky DistilleryFleurieu Distillery is situated in Goolwa, South Australia. In 2004 it was formerly known as The Steam Exchange, and rebadged to the Fleurieu Distillery last year. Head Distiller Gareth Andrews says Fleurieu Distillery is about 80km south of Adelaide and just feet from the River Murray on Goolwa Wharf, less than 3km from where Australia’s longest river meets the Southern Ocean. Andrews said, the “maritime” conditions at Goolwa are ideal for maturing whisky because of its fresh sea breezes, fluctuating temperature range and mild summers. All the whisky is matured in port barrels, the distillery’s first whisky release was unpeated, the second peated and the third “about half way in between”, “What we’re trying to do is have a family resemblance – a particular flavour that is the Fleurieu Distillery so rather than individually releasing barrels, we take several single malt whisky barrels of ours and blend them into a bigger batch,” Andrews said. A new 36-hectolitre still is expected to arrive early next year to allow production to be ramped up considerably. So if we have Glenlivet single malt and we mix it with another Glenlivet single malt it is still as single malt. However if we mixed that single malt with a Glenfiddich it is now blended whisky, simples. There’s always talk of blended whisky not being nearly as good as its closest competitor the single mal, but we beg to differ here at The Whisky Company.
