Stuart’s father won a “25 words or less” competition, the prize of which was a trip to Scotland to tour distilleries. This experience inspired Stuart and his father to pursue their passion for whisky. The name “Chief’s Son” is a direct nod to their family heritage. The surname McIntosh, or “Mhic an Tòisich” in Scottish Gaelic, translates to “Son of the Chief.” This ancient family battle honour, awarded 900 years ago, serves as the foundation for the distillery’s name and its commitment to family legacy and tradition. Chief’s Son is run entirely by the family, with Stuart and Naomi McIntosh serving as the co-founders, owners, and distillers. They believe in the power of whisky to connect people, families, and generations, a sentiment that is at the core of their brand.

This is Batch 002, known by the name “Holden.” It’s a limited edition release that yielded 900 bottles. The whisky is matured in ex-fortified French oak barrels. The use of fortified wine casks is common in Australian whisky, and French oak adds a layer of spice and complexity that differs from the more common American oak. The whisky is crafted from a base malt and a specialty malt, which includes a small percentage of peated malt. This gives it a subtle peated characteristic that is designed to add a deep caramel flavour rather than an overwhelming smokiness. Our Tasting Notes

Nose: The aroma is rich with sweet fruit and sherry notes. You can expect roasted nuts, baked toffee, and warm butterscotch. There are also complex undertones of sweet leather, old oak, and a hint of spice. Baked stone fruits, dark vanilla, and crisp toffee are also there.

Palate: The mouthfeel is very big, round, and smooth. The palate is dominated by full sherry and balanced oak, with a sweet barley character. It is oily and complex, with a late caramelised peat note that provides a subtle warmth. Hints of dark chocolate, brittle toffee, and licorice.

Finish: The finish is medium to long, with lingering notes of sherry and old oak. The sweetness and spice from the palate gently fade, leaving a warm and satisfying aftertaste.
