Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.

The Dailuaine Distillery derives from the Scottish Gaelic ‘An dail uaine’ meaning ‘green valley’. This distilleries whiskies are rarely seen and sought after when they are available. Owners Diageo use the malt from the distillery in blends, mainly Johnnie Walker. Only the best casks make it out to be independently bottled. Available usually at cask strength as a vintage or aged statement. Interestingly, Dailuaine was chosen to fill the void left by Clynelish when it was closed for refurbishment. Expect a heavy meaty malt whisky with cereals and plenty of fruity components.

This single malt whisky was distilled in 1997 at the Dailuaine distillery in the Scottish Speyside whisky region. It was matured solely in two hogsheads and in 2022 was bottled at 48.2% alc/vol natural cask strength as part of the Signatory Vintage cask strength collection. This whisky has no added colouring and is not unchillfiltered.

Our Tasting Notes

Nose: Freshly peeled apples and toasted nuts, there’s a wonderful integrated cinnamon spice with freshly shaved oak.

Palate: Earthy vanilla mingles with pistachio, toffee and black pepper. The oak is extremely well integrated.

Finish: Long with notes of soft oak and freshly baked ginger biscuits.
