In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognised by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky.
Kavalan Triple Sherry Cask Single Malt Whisky is a rare combination of three exquisite sherry-aged casks — Oloroso, Pedro Ximénez, and Moscatel — with the dried fruits of Oloroso as its main character. Rich caramel and the sweetness of maltose are layered with the distillery’s unique tropical fruits to create a delicate but distinct sherried whisky that can be enjoyed on easy-drinking occasions with friends.
Our Tasting Notes
Nose: Berry compote, dried fruits soaked in cognac, lime citrus and dark chocolate, Christmas cake spice and toffee sweetness.
Palate: Raisins and sultanas, sherry dried fruits, garden herbs and cinnamon spice.
Finish: Creamy caramel, red berries and very well integrated oak. Long but drying.
*Best paired with desserts, dark chocolates, nuts, seafood salads, smoky meats and mildly spicy cuisine.

A surprising little dram from Taiwan. The aging in Sherry casks, namely oloroso, Pedro Ximénez (PX) and Moscatel casks, really lends itself to a sweet expression.
The result of this process offers palate notes of cinnamon, candied salt plum (a taiwanese favourite amongst children and adults) , citrus, berry, longan, honey, chocolate, and toffee. The nose presents with dried fruit, plum and sweet spices.
In the lighter range of whiskey at 40% it is an easy dram to sip.
Pairs well with lightly seasoned fried fish or chicken.
Salt can draw out some of the sweetness like with a piece of fruit.
There are no boundaries to flavour!
