The Kilchoman Distillery was established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Kilchoman gives everyone the chance to see what is best about the grass-roots traditions of malt distilling. As well as being one of only a handful of distilleries still practicing floor malting, they also grow their own barley at the distillery, completing all parts of the production process at the distillery – from barley to bottling.
The Machir Bay range is Kilchoman’s core expression, first launched in 2012 when it won the prestigious IWSC 2012 Gold Award – Best in Class. Bottled once a year, each release contains more mature casks allowing Kilchoman fans to follow the development of the unique Kilchoman malt as it matures. Matured in a combination of both ex-bourbon barrels and Oloroso Sherry butts, Machir Bay has a well-balanced combination of rich tropical fruit, peat smoke, light vanilla and intense sweetness.
Our Tasting Notes
Nose: Lemon tart, vanilla snap biscuits, hints of mint and soft peat smoke.
Palate: Raisins and dried tropical fruit notes leads to sea salt and smouldering peat.
Finish: Long with hints of dark fruits and freshly ground peppercorns.
