Starward Distillery was created by David Vitale who was looking to create a distillery inspired by Melbourne’s famous temperature swings or ‘four seasons in one day’. The distillery was once situated at Essendon Airport in the old Ansett Hanger but after popularity of the whisky grew the space they had was too small. The distillery was moved to a larger space in Melbourne’s Port Melbourne district in 1996 and production was significantly increased. The distillery makes use of local wine barrels to mature its whisky. Winning international awards and local awards to strengthen its claim as a distillery on the rise to fame.

The Starward Projects Bourbon Cask Australian Single Malt Whisky is  highly collectable limited edition release from the Melbourne-based Starward distillery, known for its innovative approach to whisky making. Unlike their core range, which heavily utilises red wine barrels, this expression is a showcase of what their spirit tastes like when matured entirely in ex-bourbon casks. Matured for approximately 4.5 to 5 “Melbourne years” in ex-bourbon casks, specifically from Maker’s Mark and Wild Turkey. The “Melbourne years” term is a nod to the city’s notoriously fickle weather, which accelerates the maturation process.The whisky is bottled at a higher-than-average strength of 52% ABV (104 proof), which fans appreciate for its intensity and flavour.

Our Tasting Notes

Nose: Expect a bright and fruity profile with notes of tropical fruits like roasted pineapple, green banana, and honeydew melon. There are also sweet and creamy notes of vanilla, white chocolate, and a hint of lemongrass.

Palate: The palate is sweet and buttery, with flavours of caramel, shortbread, grilled pineapple, and toasted coconut. A subtle peppery spice often emerges on the finish.

Finish: The finish is medium to long, with lingering notes of vanilla custard, honey, and toasted oak.

Its popularity stems from its unique flavour profile, which highlights the distillery’s base spirit without the dominant influence of red wine barrels.
