The Whisky
Thomson South Island Peat is a remarkable exploration of terroir, proving that the spirit of Islay has a formidable rival in the deep south of New Zealand. Bottled at 46% ABV, this single malt is crafted from 100% New Zealand grown barley, which has been kiln smoked using peat deeply integrated with the botanical history of the South Island. Unlike Scottish peat, which often leans toward medicinal or iodine notes, the NZ South Island peat offers a more “earthy,” campfire smoke profile that is both rugged and remarkably clean.
Distilled in the traditional copper pot stills at their Riverhead distillery and matured in ex-Bourbon barrels, this expression is designed to showcase the raw honesty of the peated grain. The 2025 release continues Thomson’s tradition of non-chill filtration and natural colouring, allowing the oily texture and golden hue to remain intact. Our Tasting Notes
Nose: An evocative opening of warm driftwood smoke and scorched earth. Beneath the initial cloud of peat, you’ll find a sweet core of baked apples, vanilla custard, and lemon curd. There is a distinct herbal quality—reminiscent of dried manuka leaves and damp forest floor—that adds a unique Southern Hemisphere character.
Palate: The palate is oily and robust. The smoke is prominent but sweet, carrying flavours of smoked honeycomb and charred orchard fruits. Mid palate, the bourbon cask influence brings a creamy structure of toffee, malted milk biscuits, and a dusting of cinnamon. The peat stays earthy throughout, providing a solid, grounded foundation.
Finish: Long and warming. The smoke slowly dissipates to reveal lingering notes of clove, black tea, and a touch of roasted nuts. A final, sweet trail of vanilla bean and woodspice provides a clean, satisfying end.
