Hibernia Distillers is a new member of Ireland’s rapidly growing Irish whiskey sector. Based in Innishannon, West Cork, Ireland, Hibernia Distillers produce a range of Premium, Single Malt, Irish Whiskey under the HYDE
brand.
Started by brothers Conor & Alan Hyde in 2014 the brand has gone from strength to strength with sales now in over 15 countries worldwide.
We’ve featured two bottlings from the range below for your viewing (and drinking) pleasure.
Hyde No.1 President’s Cask 10 year Old Sherry Cask Finished (This one has won multiple awards this year as best single malt Irish whiskey incl. a double gold at the prestigious San Fran world spirits competition)
This remarkable whiskey is initially matured in American oak ex-Bourbon casks for 10 years before undergoing a second 10-month maturation in Oloroso sherry casks to add a deeper complexity to the underlying flavours. The prestigious award winner is non-chill filtered, bottled at 46% ABV and produced in very small batches of only 5,000 bottles. Each bottle carries a unique bottle identification and batch number allowing it to be traced right back to its original wooden cask and fill date. It’s a stunning example of why we’ll all be drinking much more Irish whiskey in the years to come.

Maturation Regime:

Tasting Notes:
Colour: Gold
Nose: Opens with delightful notes of peaches & cream, vanilla and honey followed by heavier notes of caramel and chocolate infused with spices. Hints of fruits including orange, lemon and banana with a beatiful barley malt softness
Palate: Wonderfully smooth and complex. Creamy and fruity with notes of caramel and Manuka honey, apricot and plum all balanced beautifully with a silky malt texture
Finish: Rich, spicy and oaky with a long, rich, lingering finish
Food match:
Very well matched with a hearty Irish stew, or try gingerbread and mature cheddar for a mouth-watering accompaniment
HYDE No.3 1916 Single Grain Irish whiskey (This one recently won a gold at the Irish whiskey awards for a single grain)
Made on a traditional ‘coffey still’ from pure Corn grain. It is a triple distilled, pure grain, Irish whiskey from one single distillery location. Made in small batches and not blended in any way. It is matured for over 6 years in flame charred, first fill, ex-bourbon Jack Daniels casks from Kentucky in the U.S.A.
ABV: 46% Vol./Alc. 92 Proof.
Tasting Notes:
Nose: Cinnamon & Clove with succulent sweet caramel flavours. Complex & spicy with sweet American Bourbon notes.
Taste: Robust single grain spices with a touch of cracked black pepper give way to a buttery vanilla and charred oak taste.
Finish: Long and satisfying, ending with a silky combination of oak and barley.
