A single malt whiskey created through friendship and the aspiration for a sophisticated, thoughtful, & ultra-premium product. Founded by Mark Bouris, Andrew Nugent and Paul Giles, three gentlemen who know what life is all about: hard work, curiosity, laughter, and time spent reflecting and enjoying it all.

Using traditional cultivating techniques for the land, The Bird captures the flavours and tempo of the bush into each glass poured.

A vatting of individually selected 225L casks, this Apera offering has yielded whiskey with luscious red gold hues. Carefully blended and finished briefly in Bird in Hand Chardonnay cask it offers delightfully balanced complexity with honeyed overtones that will undoubtedly make it memorable whisky for any special occasion.

Our Tasting Notes

Nose: Malted barley sweetness combines with Manuka honey and soft hints of marshmallow and subtle almond meal.

Palate: Stewed fruits and delicate spices combine with creamy vanilla, toasted nuts and blonde toffee.

Finish: Medium to long with a buttery caramel, creamy toffee and fruit spices.
