The Waubs Harbour Distillery, which is situated in Bicheno on the far east coast of Tasmania, was once an old oyster hatchery. The distillery is set on the rocks with 5 salt laden bond rooms and a cooling system run entirely by the ocean.

The in house lab allows the distillery to experiment with culturing their own yeasts to create particular flavour profiles to pair perfectly with selected casks. Each element of the distillation process, from making their own wash, to the shape of their custom designed stills, to the sensory driven cut points in their spirit, has an effect on the whisky and has been designed to create a spirit that is identifiably Waubs Harbour.

Head Distiller Rob Polmear has a vast amount of experience from his time as Head Distiller at Overeem whisky and Head Of Production at Lark Distillery.

This is the most premium of releases, the Founder’s Reserve, with bottle #1 initially being auctioned off for $4800. A deliciously rich and oily single malt with a Tasmanian maritime character to it. The highest quality ex-tawny port casks, as rated by our head distiller, were reserved for the spirit. The high strength spirit retains oils and intense flavour. Big sultana port notes with a little chocolate and long salted caramel finish. Juicy and yum. Bottled at cask strength of 62% ABV.

The Founder’s Reserve was awarded a Gold medal at the World Whisky Masters 2023.

Our Tasting Notes

Nose: Fruity and sweet, apricots and sultanas combine with golden syrup and vanilla cream.

Palate: This one has sticky date pudding written all over it, warm and luscious with big juicy fruity notes and an oily texture. There’s hints of chocolate and shortbread.

Finish: Long with coffee beans, salted caramel, pickled ginger and dark chocolate.
