The Waubs Harbour Distillery, which is situated in Bicheno on the far east coast of Tasmania, was once an old oyster hatchery. The distillery is set on the rocks with 5 salt laden bond rooms and a cooling system run entirely by the ocean.

The in house lab allows the distillery to experiment with culturing their own yeasts to create particular flavour profiles to pair perfectly with selected casks. Each element of the distillation process, from making their own wash, to the shape of their custom designed stills, to the sensory driven cut points in their spirit, has an effect on the whisky and has been designed to create a spirit that is identifiably Waubs Harbour.

Head Distiller Rob Polmear has a vast amount of experience from his time as Head Distiller at Overeem whisky and Head Of Production at Lark Distillery.

The Waubs Harbour Port Storm Batch 4 Bottled at 48% ABV is the flagship Series of single malt whiskies from Waubs Harbour Distillery. It is 100% distilled and matured at Waubs harbour Distillery, just metres from the ocean. Matured in American Oak ex-Bourbon casks to highlight the Waubs maritime salted toffee characters but also the use of French Oak ex-Tawny Port Casks has given the whisky a layer of brown sugar syrup and poached pear.

The Port Storm whisky was awarded a Master medal, the highest accolade, at the World Whisky Masters 2023.

Our Tasting Notes

Nose: Mince pies, vanilla, toffee, brandy custard, sultanas, poached pears and glazed cherries.

Palate: Vanilla custard, rich Brandy soaked raisins, golden syrup, treacle toffee, pear tarte tatin, salted butter and baking spices.

Finish: Long and lingering, salted butter, soft spices and ripe stone fruits.
