Waubs Harbour Rum Cask is a limited-edition single malt whisky from the Tasmanian distillery, Waubs Harbour. This expression stands out for its unique maturation process and its celebration of local traditions. It’s a single malt that captures the essence of the distillery’s coastal location and its connection to the local community.

The whisky begins its maturation in ex-Tawny Port casks, which impart rich fruit and spice notes. It’s then finished in casks made from a very special, rare 80-year-old rum vat. These rum casks were coopered (made) on the old slipway right outside the distillery, adding a local touch to the process. This finishing period in rum casks adds layers of tropical fruit and vanilla to the whisky’s profile.

Only 608 bottles of this Rum Cask release were produced, making it a highly limited expression. It’s bottled at 51.7% ABV to retain its rich oils and full flavour. This whisky was released to celebrate the opening of the crayfishing season on the east coast of Tasmania, further emphasising its connection to the local community and traditions.

Our Tasting Notes

Nose: Tropical notes of pineapple and coconut, alongside big vanilla and wood spices.

Palate: A burst of sweet tropical fruits, reminiscent of a pina colada, followed by biscuity malt, plump sultanas, and cinnamon.

Finish: The finish dances between the tropical fruit notes and the deeper malt character, creating a balanced and complex experience.
