The Waubs Harbour Distillery, which is situated in Bicheno on the far east coast of Tasmania, was once an old oyster hatchery. The distillery is set on the rocks with 5 salt laden bond rooms and a cooling system run entirely by the ocean.

The in house lab allows the distillery to experiment with culturing their own yeasts to create particular flavour profiles to pair perfectly with selected casks. Each element of the distillation process, from making their own wash, to the shape of their custom designed stills, to the sensory driven cut points in their spirit, has an effect on the whisky and has been designed to create a spirit that is identifiably Waubs Harbour.

Head Distiller Rob Polmear has a vast amount of experience from his time as Head Distiller at Overeem whisky and Head Of Production at Lark Distillery.

The Waubs Harbour Batch 4 bottled at 43% ABV is the flagship Series of single malt whiskies from Waubs Harbour Distillery. It is 100% distilled and matured at Waubs harbour Distillery, just metres from the ocean. Matured in American Oak ex-Bourbon casks to highlight the Waubs maritime salted toffee characters but also the use of French Oak Port Casks has given the whisky a layer of creamy raisins and butterscotch.

Waubs Original was awarded a Gold Medal at the World Whisky Masters 2023.

Our Tasting Notes

Nose: Salted toffee signature aromas lead to sweet spices and toffee apples.

Palate: Shortbread biscuits, toffee apples, raisins and sultanas, soft floral notes, salted caramel.

Finish: Long and luscious with lashings of port, salted butter, caramel and butterscotch and raw cookie dough.
