This 700ml single malt is the sister bottling to Cask #7, offering a subtly different window into this high octane maturation. Distilled on May 4, 2011, and bottled on May 27, 2025, it has been aged for 14 years and finished in a single First Fill Pedro Ximénez (PX) Hogshead.
Presented at a natural cask strength of 61.9% ABV, Cask #8 is a strictly limited release of just 340 bottles. While it shares the same lineage as Cask #7, this specific hogshead has produced a slightly more balanced profile, leaning more into the integration of fruit and spice. As with all entries in the Cask Strength Collection, it is non-chill filtered and natural in colour, presenting a deep amber hue with brilliant mahogany highlights.
Our Tasting Notes
Nose: Aromatic and deep. You are greeted by a fragrant wave of raisin bread and dried dates, immediately followed by a zesty layer of orange peel and dark chocolate. As it breathes, the first fill PX influence reveals more delicate, sophisticated notes of polished oak and a touch of balsamic glaze, creating a nose that is remarkably layered and rich.
Palate: The arrival is full-bodied and “velvety,” with the 61.9% ABV providing a powerful but controlled warmth. It delivers an explosion of sweet PX sherry and soft mocha, which quickly evolves into a mid-palate of plum compote and gingerbread. The signature Aultmore spirit provides a clean, malty foundation, allowing the nutmeg and clove spices from the wood to shine without becoming overpowering.
Finish: Very long, warm, and graceful. The finish lingers with a final flourish of dark honey and rich oak, finally tapering off with a clean trail of liquorice and a subtle, sophisticated dryness.
The Distillery
Aultmore, founded in 1897 by Alexander Edward, is located in the heart of the “Foggie Moss” near Keith. A unique factual detail: The distillery is named after An t-Allt Mòr, the “big burn” that provides the exceptionally pure water essential to its spirit. Aultmore has a long standing reputation as a “top dressing” malt for premium blends like Dewar’s because of its delicate, floral, and grassy character. This Signatory Cask #8 represents a rare opportunity to see that “shy” spirit transformed into a powerhouse by the intense, syrupy influence of first fill Pedro Ximénez oak.
