The Bimber Distillery is located in London, England and was founded in 2016. The first casks of Bimber were laid down on the 26th of May 2016 and these casks were release three years later in September 2019 with a limited release of 1000 hand numbered bottles. This release sold out in under three hours, why? It’s the fruity new make spirit that is created here, it balances so well with re-charred oak barrels, fortified wine barrels and bourbon barrels. Bimber also sources its barley from a single farm, it malts and mashes this barley by hand and then slowly ferments the wart in their very own washbacks for 7 days. A fruit forward whisky with a very bright future.

Bimber Klub Edition No.3 Single Malt Whisky is the 3rd Klub release from the highly sought after English Distillery. Limited to Klub members we have managed to get our hands on a small quantity of bottles. After first being matured in ex-bourbon oak casks the whisky is given a finish in Imperial Stout casks brewed by the craft brewery Brew By Numbers in London. The finish was for around 6 months. Bottled in November 2022 at natural cask strength of 51.2% abv and only 1650 bottles were available for purchase.

Our Tasting Notes

Nose: Ripe peaches and mandarines, dark chocolate notes, espresso, creamy dark caramel with floral notes of angelica and sunflower.

Palate: Fresh stone fruit notes, creamy vanilla toffee, malt chocolate, toasted oak, herbal nuances.

Finish: Long with notes of crushed toasted nuts, orange peel, nutmeg and cinnamon.
