Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at four strengths: 43% The Vintage Collection, 46% Unchillfiltered (UCF), 57.1% 100 Proof Collection and Cask Strength Collection.
Glen Spey is a hidden gem within the Speyside region, often quietly working in the background, primarily producing spirit for blends. This makes single malt bottlings, especially independent ones like this, a rare treat and a wonderful opportunity to experience the distillery’s character in its pure form. Glen Spey is known for producing a spirit that is generally lighter and fruitier, with a subtle nutty undertone.
This particular expression was distilled in 2007 and has been matured for 16 years in a 1st Fill Oloroso Sherry Butt. This significant maturation in a large, active sherry cask has imparted a wonderful depth of rich fruit, spice, and sweetness, beautifully enhancing Glen Spey’s inherent elegant spirit. Bottled as part of Signatory’s highly regarded Cask Strength Collection, it comes in at a robust 57.3% alc/vol. As with all Signatory bottlings in this range, it is presented without chill-filtration and with natural colour, ensuring an authentic and unadulterated tasting experience that captures the true essence of Glen Spey and the profound influence of the sherry cask. This whisky offers a complex and deeply satisfying profile, expertly marrying Glen Spey’s elegant character with the profound influence of a first-fill Oloroso sherry cask. This is a highly limited single cask release (#3) from Signatory Vintage’s Cask Strength Collection, with 646 bottles produced.
Our Tasting Notes
Nose: Expect deep aromas of dark fruits such as plums and figs, with notes of dark chocolate and roasted nuts. Hints of clove, orange zest, and a touch of tobacco add extra complexity.
Palate: Full and creamy with flavours of sherry-soaked raisins, rich caramel, and espresso. The influence of the Oloroso sherry cask brings layers of spices like cinnamon and nutmeg, with a subtle hint of toasted oak and honey. It’s powerful yet remarkably elegant.
Finish: Long and warming, with lingering notes of dark cocoa, spiced honey, and a light smokiness. The finish remains long and ends in a perfectly balanced mix of sweet and spicy, with a lasting sherry warmth. This whisky is an exceptional example of a well-aged single malt, demonstrating the complexity and enjoyment these whiskies can offer.
