Hibernia Distillers in Ireland have create a superb limited edition single grain whiskey. The Hibernia Distillers have managed to source some excellent barrels from another distillery in Ireland, possible Cooley distillery. After maturation in ex-bourbon barrels they have transferred the single malt into first fill ex-burgundy casks to mature.

Bottled at 46% ABV and no contact to chill filtration this whiskey is an experience not to be missed. It is also history in the making with the Hibernia Distillers team distilling their own whiskey recently which will be released in 5 years. More Irish whiskey for us to choose from, that’s never a bad thing.

Tasting Notes

Nose: Cranberries, raspberries and strawberries, vanilla cream and toasted tuille.

Taste: Summer pudding strudel with vanilla custard and toasted honeycomb, sprinkles of citrus peel.

Finish: Long and very satisfying. Homemade jam on rye bread and balanced oak.
