The extended aging allows for a deeper and more complex flavour profile. It uses the same classic Jack Daniel’s mash bill of 80% corn, 12% malted barley, and 8% rye. Barrels are initially placed on the upper floors of the barrelhouses (known as the “Buzzard’s Roost”) where the high temperatures accelerate the maturation process. They are then moved to cooler, lower floors to slow the aging and allow the whiskey to mellow further. This meticulous process is what gives the whiskey its unique character.
