Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
Mortlach was established in 1823 in the wake of the Excise Act. Built on the site of an older illicit distillery Mortlach was the first legal distillery in Dufftown which is the epicentre on Speyside. Now under the ownership on Diageo it plays a very important role in some of the world’s finest blends. This is due to the oily meaty character it has and the mass production. Known as “The Beast of Dufftown” this character is due to its special distillation process resulting in a spirit which has been distilled 2.81 times. Mortlach is again making its mark as a single malt with last years Diageo Special Release bottling selling out in record time.
This single malt whisky was distilled in 2013 at the Mortlach distillery before being placed in 1st & 2nd Fill Oloroso Sherry Butts. In 2024 it was bottled at 57.1% alc/vol as part of the Signatory Vintage 100 Proof Collection.
Our Tasting Notes
Nose: The first impression is rich and robust, with a deep aroma of dark dried fruits. Think of plump raisins, luscious figs, and maybe a hint of prune. Then comes that distinctive meaty character that Mortlach is known for. It’s not like roast beef, but more of a savoury, umami richness, with a suggestion of beefy broth or perhaps a subtle hint of cured meat. This is intertwined with a gentle savoury spice, like a distant whisper of black pepper and a touch of earthy umami. As you delve deeper, you’ll find sweet notes that add balance: decadent dark chocolate, and perhaps a whiff of creamy toffee. Finally, there’s a grounding note of oak, hinting at the time spent in the cask, and adding a touch of dry spice.
Palate: The palate is rich and full-bodied, delivering a complex and powerful experience. The texture is often described as velvety or even slightly oily. The meaty and savoury notes take centre stage, with a bold, umami-rich character. You might find flavours of braised beef, game, or even a hint of cured ham. These savoury notes are balanced by a rich sweetness, reminiscent of dark caramel, molasses, or PX sherry. The oak influence is prominent, providing structure and tannins, along with flavours of dark chocolate, espresso, and a hint of leather.
Finish: The finish is long and lingering, leaving a lasting impression on the palate. The savoury and meaty notes persist, intertwined with the sweetness and spice. You might detect a pleasant dryness from the oak tannins, along with a hint of bitterness that balances the richness. The final notes include dark chocolate, coffee, and a subtle hint of smoke.
