Our Tasting Notes
Nose: Rich and inviting, immediately presenting notes of deep dried fruits like raisins, figs, and sultanas, beautifully intertwined with dark chocolate, toasted nuts, and a warm sherry sweetness. Hints of rich oak and subtle baking spices such as cinnamon and nutmeg are also present.
Palate: Full-bodied, unctuous, and incredibly smooth, coating the mouth with a luxurious texture. Flavours of sticky toffee pudding, rich fruitcake, and dark berries dominate, with a profound sweetness from the Oloroso sherry. This is expertly balanced by a gentle spiciness, notes of polished oak, and hints of espresso or cocoa, creating a complex and indulgent profile.
Finish: Long, warming, and profoundly satisfying. The rich sherried fruit and dark chocolate notes linger beautifully, accompanied by a comforting oak dryness and a persistent, complex spice that gently fades.
Don’t miss the chance to experience the elegant and refined character of this Speyside gem, bottled at a perfect 100 Proof strength.
Strathmill Distillery is located in Keith, in the heart of the Speyside region of Scotland. Established in 1891 as a flour mill before being converted into a distillery in 1895, it maintains a unique heritage. Strathmill is particularly known for using purification plates on its spirit stills, which lead to a lighter, purer, and more refined new make spirit. This elegant and versatile spirit has historically been highly prized by blenders, with the vast majority of its production contributing to famous blended whiskies such as J&B Rare. As a result, official single malt bottlings from Strathmill have been relatively rare, making independent releases like this one from Signatory Vintage a valued opportunity for enthusiasts to explore its distinctive character. The distillery does not have a public visitor centre.
Signatory Vintage, founded in 1988 by brothers Andrew and Brian Symington, stands as one of Scotland’s most respected independent bottlers. Their philosophy is rooted in offering whisky enthusiasts a broad and diverse range of unique expressions, often from distilleries whose whiskies are not commonly seen as official single malts. Signatory is dedicated to bottling whiskies at natural cask strength or other high proofs like their 100 Proof Collection, always ensuring they are non-chill filtered and natural in colour. They provide meticulous details, including cask numbers and bottling dates, underscoring their commitment to authenticity and transparency, allowing connoisseurs to delve into the subtle nuances that exist between individual casks.
