The Whisky
Step into the world of decadent Portuguese influence with the Edradour 15 Year Old Quinta de São Francisco Estremadura Wine Finish. Distilled in 2010 and bottled in 2025, this 700ml single malt represents a sophisticated chapter in Edradour’s “wine finish” odyssey. After spending over a decade in traditional oak, the spirit underwent a transformative 33 month finish in rare hogsheads that previously held Licoroso style fortified wine from the Quinta de São Francisco estate in Portugal’s coastal Estremadura region.
Bottled at a resounding cask strength of 57.7% ABV, this release is a bold, unadulterated look at the distillery’s heavy spirit. Inside information reveals that the choice of Quinta de São Francisco wood was intended to provide a “darker, more brooding” fruit profile than standard Port casks, leaning into the savoury sweet complexity of the Estremadura terroir. As with all high end Edradour releases, it is non-chill filtered and natural in colour, boasting a deep, reddish amber hue.
Our Tasting Notes
Nose: Deeply layered and indulgent. You are greeted by the scent of honeyed figs and stewed red berries, followed by a decadent note of brown sugar and candied orange peel. As it opens, deeper aromas of dark honey and polished oak emerge, with a subtle herbal warmth reminiscent of dried lavender and wild thyme.
Palate: The mouthfeel is exceptionally velvety and viscous, characteristically Edradour. It opens with an intense burst of black cherry jam and raisin loaf, which is quickly met by a spicy surge of black pepper and ginger. Mid-palate, the fortified wine influence shines through with notes of dark chocolate and festive spices (nutmeg and clove), balanced by a hint of savoury malt.
Finish: Long, warming, and remarkably structured. The finish lingers with a final trail of dried fruits and sweet tobacco, eventually tapering off with a drying flourish of cocoa powder and soft wood tannins.
The Distillery
Edradour, long celebrated as “Scotland’s little gem,” is located in a picturesque glen in the Highlands near Pitlochry. Despite their international fame, they remain one of the most traditional distilleries in existence, utilising a cast iron mash tun and two of the smallest legal stills in Scotland. A unique factual detail: The distillery is owned by Signatory Vintage, one of the world’s premier independent bottlers. This relationship gives Edradour unprecedented access to the world’s finest and most experimental casks—like these Quinta de São Francisco wine barrels—allowing them to produce small batch releases that are virtually unique in the Scotch whisky landscape.
