This 700ml single malt is part of the elite “Symington’s Choice” range, a series personally selected by Signatory founder Andrew Symington to showcase the most exceptional casks in the warehouse. Distilled on November 17, 2009, and bottled on May 27, 2025, this whisky spent a full 15 years in a single First Fill Oloroso Sherry Butt.
Clocking in at a ferocious 65.6% ABV, this is one of the highest-proof 15-year-old malts on the market. It is a bold, uncompromising “Sherry Bomb” that highlights the robust, honeyed spirit produced at GlenAllachie. Being a single cask release, it is non-chill filtered and natural in colour, presenting an intense, dark mahogany hue. With only 570 bottles produced, it is a rare treasure for those who appreciate high intensity, cask-strength maturation.
Our Tasting Notes
Nose: Deep, indulgent, and “brooding.” You are greeted by a concentrated wave of balsamic glaze and black cherry jam, followed by a sophisticated layer of roasted pecans and dark chocolate truffles. As it breathes, the first fill Oloroso reveals even deeper notes of fig syrup, pipe tobacco, and a hint of well-seasoned leather, all wrapped in a warm dusting of cinnamon spice.
Palate: The arrival is powerful and “velvety,” delivering a monumental explosion of flavour. It coats the tongue with treacle toffee and spiced blackcurrants, which quickly evolve into a mid-palate of molasses cake, espresso, and burnt sugar. Despite the 65.6% strength, the spirit’s natural heather honey core provides a silky balance to the intense layers of clove spiked caramel and roasted hazelnut.
Finish: Long, warming, and remarkably complex. The finish lingers with a final flourish of rich oak tannins and cocoa dust, finally tapering off with a flash of dried chili heat, cinnamon, and a lingering touch of tobacco.
The Distillery
GlenAllachie, located near Aberlour in Speyside, was designed by the famed architect William Delmé-Evans and founded in 1967. A unique factual detail: The distillery has undergone a total “renaissance” since being acquired by the legendary Billy Walker in 2017. Walker, who also transformed Glendronach and BenRiach, is known for his hands on wood management, often re-racking spirits into specialised casks to maximise flavour. However, this Signatory Symington’s Choice release is a pure, full-term maturation in a single first-fill butt, allowing the natural, unadulterated synergy between the GlenAllachie distillate and top-tier Oloroso oak to take centre stage.
