Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
The North British Distilling Company is a grain whisky distillery located in Edinburgh’ Gorgie district on the south west of the city. The distillery was originally founded by a group of independent distillers in 1885 and the site was selected due to its close proximity to the national railway network which allowed access to deliveries of grain and also easy access to product distribution. It was also close to the Port of Leith allowing for easy deliveries of maize and grain as well as an easy way to export products. The distillery was also positioned near the city sewer which allowed easy and efficient access to the flushing out of effluent. The site is currently owned by Lothian Distillers which is a venture jointly owned by Diageo and the Edrington Group. This was to increase the sales of Scotch whisky to India, China and South America and brought about production of 65,000,000 litres per annum. Mainly used in Johnnie Walker and Famous Grouse production.
This single grain whisky was distilled in 1991 at the North British Distillery before being placed in a refill Sherry Butt and left to mature for no less than 29 years. It was bottled in 2020 at 49.2% ABV as part of the Signatory Vintage Cask Strength Collection.
Our Tasting Notes
Nose: Some dark berries and plenty of spicy ginger notes, dark toffee and freshly baked bread.
Palate: Chocolate fritters, orange zest, a dust of cinnamon and freshly cracked black pepper.
Finish: Christmas cake spices and dark chewy caramel.
