Penelope Bourbon was founded in 2018 by lifelong friends Mike Paladini and Danny Polise. The brand name is a heartfelt nod to Mike Paladini’s daughter, Penelope, born that same year. Their vision was to create a straight bourbon whiskey that everyone could appreciate and enjoy, embodying the daily joy of celebrating life’s pleasures. Penelope Bourbon sources its spirits from MGP Ingredients (Ross & Squibb Distillery) in Lawrenceburg, Indiana, a highly respected distillery known for producing quality bourbon. Penelope is known for its expertise in blending multiple bourbon mash bills (typically a four-grain blend) and its innovative approach to cask finishing. They actively collaborate with leading cooperages like Tonnellerie Radoux to push boundaries in flavor development, utilizing technologies like OakScan® for precise oak selection

Penelope Bourbon Barrel Strength American Oak Bourbon Whiskey is a testament to the intensity that can be achieved when a high-quality bourbon is left uncut from the barrel. It pushes the boundaries of their flagship Four Grain’s balanced flavour, offering a bold and captivating experience for enthusiasts seeking depth and strength. Each batch is a blend of three bourbon mash bills, typically comprising Corn, Wheat, Rye, and Malted Barley, with corn being the dominant grain (averaging around 80%). Aged for 4-6 years in new charred American oak barrels (often with #4 char staves and #2 char heads). Matured in hand-selected new American oak barrels and bottled at 57% alc/vol completely uncut (without water dilution) and non-chill filtered at its natural barrel strength. This preserves the full spectrum of flavours extracted from the oak. It is non-chill filtered, ensuring maximum flavour intensity and complexity. A core expression within Penelope’s range, known for its varying batch proofs and consistent quality.

Penelope Barrel Strength delivers an intense and complex profile, amplifying classic bourbon notes with a robust warmth and rich depth.

Nose: Expect a rich and expressive aroma with notes of sweet caramel, vanilla bean, and toasted oak. Hints of baking spices (cinnamon, nutmeg), brown sugar, and a subtle orange zest can also be found, with underlying notes of pecans and dried apricot.

Palate: Full-bodied and incredibly smooth for its strength, with a rich, layered texture. Flavors of smooth caramel syrup, dark chocolate, and crème brûlée are prominent, quickly evolving into notes of pecans, toffee, and subtle barrel char. A peppery spice with hints of cinnamon and allspice builds, balancing the sweetness.

Finish: Long and warming, with persistent peppery spice, smoke, and a touch of dark chocolate. Lingering notes of brown sugar and caramel create an amazing lingering heat and complexity. This bourbon is perfect for sipping neat or with a large ice cube, and excels as the base for a robust classic cocktail.
